Meatloaf, Mashed Potatoes, & Mardi Gras?

The North Carolina Health Care Facilities Association's yearly expo was held Tuesday, February 21 in Raleigh, and the theme for this year's event was (you guessed it) Mardi Gras. We were there to inform attendees about the benefits of our contract food service for health care facilities and to provide samples that exemplify what sets us apart. The samples we handed out were miniature meatloaf cupcakes: meatloaf baked in a muffin pan and topped with mashed potato "icing" and parsley flakes. While these nontraditional treats often drew questions and skepticism at first glance, those who were willing to try them were glad they did, and everyone seemed to appreciate the thought and creativity that went into the dish. In addition, we gave away pieces of King Cake, a traditional Mardi Gras pastry, and allowed attendees to register for a chance to win a Gallins Gourmet Coffee gift basket. This was a fun event, and we enjoyed this opportunity to interact with attendees by giving them an enjoyable treat and a glimpse of the dedication we put into serving entrees in our facilities that are nutritious, delicious, appealing and unique.
